Originally from Modena, Italy, Marco Carboni has forged an international culinary career, training in the kitchens of some of the world's most influential chefs. Committed to sustainable cuisine, Marco actively collaborated with the Slow Food movement, supporting small producers and promoting more mindful eating. His vision of gastronomy extends beyond the plate: he champions traceability, seasonality, and respect for the product as fundamental principles.
In addition to being a chef, Marco is a professional sommelier and a passionate wine enthusiast, an element he masterfully integrates into his culinary creations. In Mexico, he has brought to life projects such as Sartoria, Bottega, Kill Bill, Pizzeria della Madonna, and Another, spaces that celebrate the authenticity of Italian cuisine through local ingredients, seasonal products, and artisanal techniques.
Marco's cuisine is a synthesis of his international experience and his deep respect for Italian gastronomic culture, reinterpreted with the flavor, richness and biodiversity of Mexico.

In Metepec, State of Mexico, a gallery has transformed a historic building into a stage for contemporary art. This vibrant and current project opens new avenues of dialogue between art, architecture, and the public.
Between exhibitions, artist residencies and traveling projects at international fairs, Galería Pedro Ávila has consolidated a curatorial vision that understands art as an agent of transformation and collective memory.
